1¾ cups all-purpose flour
1 tsp baking powder
4 eggs
2¼ cups milk
2 tsp sugar
pinch of salt
2 tsp ground cinnamon
3 oz (¾ stick) butter
maple syrup
Sift the flour and baking powder into a bowl and make a well in the center. Beat the eggs with the milk, sugar, salt, and cinnamon. Gradually beat into the dry ingredients until the batter is smooth. Melt one-third of the butter and beat into the batter, then leave it to stand for at least 30 minutes.
Melt a little of the remaining butter in a frying pan, pour in a small ladleful of the batter and tilt the pan until it makes a thin layer. Cook until golden brown on both sides. Make more panckaes in the same way, stacking cooked ones on a warm plate. Keep hot. Serve warm with maple syrup.
